
Farmhouse Tomme de Savoie is an uncooked pressed cheese, made from raw cow's milk, which will then be matured for 10 weeks with scrubbing care. When the ripening period is over, it will have a sticky white to yellow paste giving off a cellar odor.
As its name suggests, this farm Tomme de Savoie is produced from milk from the same farm, or from the same pasture. This IGP (Protected Geographical Indication) cheese is also characterized by its gray rind, resulting from the well-ripened product. Any good cheese lover will tell you that it develops a nutty taste in the mouth while being very smooth.
