Tomme de Grosse-Ile

Surface matured for 3 to 4 months, this semi-firm, pressed and uncooked cheese with a brushed rind is made from thermized cow's milk from a single herd of brown Swiss breed on the island. Under its rind varying from pale yellow to brownish presents a supple ivory paste, dotted with small openings.

It reveals aromas of undergrowth with a fruity tendency with a touch of freshness. Its melt-in-the-mouth flavor becomes thicker as it ages. Its taste is slightly tart.
