Crafted using 100% Ontario rye and aged for four years in new Ontario oak, new American oak & first fill bourbon casks, this is a truly grain-to-the-glass Rye Whisky. TASTING NOTES “A big, fruity nose with plum, rye porridge, hard pear (i.e. the sharp scent more than the honeyed scent), caramel, apples, peaches, and candied cherries.   • TWO YEAR GOUDA - Farmstead Gouda made in New Hamburg, Ontario. Mountain Oak 2 Year has a hard, slightly flakey paste and rich, butterscotch flavours.

  • 1608 - Semi-firm, washed-rind cheese made from thermalized cow’s milk, aged 2 months. Delicate yet complex buttery flavour with a hint of green apples, and a hazelnut end note. Launched in 2008, Le 1608 pays tribute to the 400thanniversary of Québec City. It is prepared with 100% Canadienne cow’s milk, a small breed of black cow introduced into Québec during the 17th century, in the early colonial days of New France. Reimplanted in the Charlevoix region in 2007, the Canadienne herds on la Ferme Hengil and Ferme Michel Pilote produce the milk that serves to make Le 1608. Laiterie Charlevoix.
