Le Majestic has a greyish mixed rind and a soft, creamy, melt-in-the mouth interior. It features rustic aromas of straw and complex fresh milk flavours with a fruity note.
Le Majestic is one of a short list of Québec cheeses made with buffalo milk. The milk used in its production comes from Élevages Maciocia in Saint-Charles-sur-Richelieu.
L’Atelier was founded in 2010, when seasoned cheesemaker Simon Hamel decided to start making his own cheeses. In the business now for more than 10 years, Mr. Hamel has studied and made cheese in France as well as in several Québec cheese dairies, including La Moutonnière.
